Pineapple Sorbet


I usually make this when I am cooking Sweet And Sour, hence the use of half a fresh pineapple.  If you want to use tinned pineapple it won’t be the same!  And if you use tinned remember to use unsweetened, or reduce the sugar content.

½ large pineapple
2 tbsps of lime juice
1 cup of sugar

Put the pineapple and lime juice in a food blender and process until smooth.  And the sugar slowly blending until it dissolves.

Pour the mixture into a metal bowl and place in the freezer.  Stir with a fork every 20-30 minutes until it is frozen.
