Chicken And Noodle Soup


This is actually one of only a few dishes we do with chicken as the majority of the time it's pork, or vegetables


Ingredients

1000ml chicken stock
2 chicken breasts, thinly sliced

(Can be made with pork, substitute pork stock and thinly sliced pork loin)

4 thai shallots chopped
1 small onion finely chopped
1 large piece of galangal or ginger, grated
4 chillis, finely chopped
200g rice vermicelli
3 heads of pak choi, chopped
Handful of mange tout


Bring the stock to the boil and then add the chicken, shallots, galangal and chillis and simmer for 7 or 8 minutes until the meat is cooked.

Add the rice vermicelli, pak choi and mange tout and cook for a further 3-4 minutes.

Serve
