Lettuce Wraps


1 head of lettuce, stem cut off
3-4 cloves of garlic finely chopped
1 thumb sized piece of galangal or ginger, grated
150g of pork mince, already fried.
2 red chillis, finely chopped ( for a milder flavor, deseed first or omit completely)
2 shallots finely chopped
1 medium carrot grated
5 mushrooms, thinly sliced
Handful of shredded cabbage
3-4 spring onions finely chopped

2 tbsp lime juice
2 tbsp soy sauce
3 tbsp fish sauce
1 tbsp oyster sauce

Put a small amount of oil into a wok and heat on a medium heat.  Turn the wok so the oil coats all of the inside then add the garlic, galangal/ginger, chili and shallots and stir fry for about 1 minute.  If the pan gets dry add water a tablespoon at a time.
Now add the pre cooked pork mince, carrot, mushrooms, cabbage and spring onions and stir fry.  Whilst you continue to stir fry add the lime juice, soy sauce, fish sauce and oyster sauce.  Continue until the ingredients are thoroughly mixed and heated through.

Put the filling onto a serving plate.

Place the lettuce on another plate.

Place these in the centre of the table, providing guest with their own plates. 

To assemble your wrap, take a lettuce leaf and place a spoonful of filling on the leaf.  Wrap the lettuce round the filling and eat.
